Benzaldehyde is an organic compound formed when the hydrogen of benzene is replaced by the aldehyde group. Benzaldehyde is the simplest and most commonly used aromatic aldehyde in industry. At room temperature it is a colorless or pale yellow transparent liquid with a aroma similar to bitter almond. It is an important raw material for medicine, dyestuff, essence and resin industry, and can also be used as solvent, plasticizer and low temperature lubricant. In the flavor industry, it is mainly used in the deployment of edible flavor, and a small amount of it is used in the daily chemical flavor and tobacco flavor. Natural benzaldehyde is the main ingredient in almond oil extract, which can also be obtained from apricot, cherry, bay leaves and peach stones. It is also found in kernels and nuts in the form Amygdalin, which binds to glycosides.
